{"id":809,"date":"2010-09-04T01:04:06","date_gmt":"2010-09-03T17:04:06","guid":{"rendered":"http:\/\/www.alfredivy.per.sg\/blogger\/?p=809"},"modified":"2017-05-30T13:58:36","modified_gmt":"2017-05-30T05:58:36","slug":"how-to-mould-your-mooncakes","status":"publish","type":"post","link":"https:\/\/www.alfredivy.sg\/blogger\/2010\/09\/how-to-mould-your-mooncakes\/","title":{"rendered":"How to mould your mooncakes."},"content":{"rendered":"<p>After making several batches of mooncakes, I have learn a few important tips, that I thought it should be shared.<\/p>\n<p>Equipment<br \/>\n1 Mooncake mould<br \/>\n2 soup bowls.\u00a0 The size of the bowl should be larger than the mould cavity.<br \/>\n2 large dinner plate, flat with no ridges.<br \/>\nWeighing scales.<br \/>\nFill one soup bowl with filling and the other with rice flour.<\/p>\n<p>Follow the <a href=\"http:\/\/www.alfredivy.sg\/blogger\/?p=797\" target=\"_blank\">post <\/a>on Mooncake recipe to prepare the dough. Portion out balls of 20 gm of dough and balls of 20 gm of filling.\u00a0 Dust one dinner plate with rice flour to prevent the mooncake from sticking.<\/p>\n<p>On another plate, spoon about a teaspoon of rice flour onto the center of the plate.\u00a0 Place a ball of the\u00a0 dough on the flour.\u00a0 Place a ball of the filling on the dough.\u00a0 Using the filling, flatten out the dough.\u00a0 Take the sides of the dough and completely cover the filling.\u00a0 Roll the ball around in rice flour until the surface is matt or not shiny. Make sure the filling is totally covered by the dough.<\/p>\n<p>Spoon a teaspoon of rice flour in the cavity of the mould.\u00a0 Shake the mould sideways to ensure the rice flour is spread evenly.\u00a0 Invert over the bowl of rice flour to remove the excess.<\/p>\n<p>Take the ball of dough and filling and press into the mould firmly.\u00a0 You make need to press on the bottom to ensure the sides are properly formed. The 40gm ball should fill 80% of the cavity.\u00a0 Do not fill it completely or the mooncake will not come out.<\/p>\n<p>Slap the mould on an open palm.\u00a0 Just like slapping a foldable Chinese fan, except hold the mould horizontal and still.\u00a0 Wait for the mooncake to fall out of the mould into your palm.\u00a0 Place the mooncake on the other dusted dinner plate.<\/p>\n<p>Repeat.\u00a0 Store completed mooncakes in the fridge boxed.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>How to mould your mooncakes.
